Ageing : 10 months in in Allier oak casks medium to light toast , no treatment / filtration before bottling, and eighteen (19), months in bottles .
Tasting characteristics : Fine, Rich. Intense, some black crystalline fruit, quite complex, very long, develops in mouth very good.
Harmony : A little higher than the room temperature. Cold cuts, smoked hams, salami. Rich dishes such as liver offal, stews, farmed or wild game. Mushroom wine sauce hare or rabbit. Cow milk hard cheese.
