Aging - Maturation: In oak barrels for 1 year. Maturation in stainless steel tanks for 5 months.
It's very interesting for the winemaker, to vinify separately the red grape variety called Mavrotragano, which covers less than 2% of Santorini vineyard.
The winemaker's Haridimos Hatzidakis target is, to produce a better quality red wine, than the one Santorini already has, from the red grape variety of Mandilaria. The wine has deep red color, aging character and soft tannins.
