Location: The vineyards are located in the peninsula of Halkidiki , close to the sea, benefiting from the breeze coming from the seashore.
Soil: Mainly sandy and clayey.
Sub-soil: Deep calcareous.
Climate: Mild Mediterranean , with a high sunshine index during the growing and maturation season.
Varietal composition: 100% Sauvignon Blanc
Harvest: End of August
Vinification techniques: Skin contact for 12 h min. at 8 oC in inert atmosphere. Slow fermentation in temperature-controlled stainless steel tanks at 18 oC. Careful fining.
Classification: Halkidiki regional w ine (Vin de Pays)
Character: Luminous yellow with vigorous peach and pineapple aromas, and a hint of green pepper; well-balanced with a refreshing aftertaste.
Serving suggestions: A delicious wine, especially with hors d'oeuvres, fish or poultry with aromatic herbs, light cheeses and fruits.
Serving temperature: Best served at 10-12 oC.
