White dry wine (Appellation of Origin of High Quality) (VQPRD). Gavalas winery takes 25% of the juice of the grapes which is placed in stainless-steel tanks and is fermented at 18C. The Santorini wine is distinguisend for its vivid golden colour. It is not heavily-flavoured and it is dominated by the flavours of pear, lemon and unriped pineapple. It is served cold (8-10C) and is perfectly drunk with seafood, cheese and white meats .
